Ingredients

1 lb ground beef (preferably 80/20 for juiciness)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp Dijon mustard

1/2 tsp salt

1/2 tsp black pepper

2 tbsp fresh parsley, chopped (or 1 tbsp dried)

1 tbsp olive oil (for cooking)

1 cup beef broth

1 cup sliced mushrooms (cremini or button)

1 tbsp cornstarch (optional, for thickening)

1 tbsp cold water (optional, for thickening)

Fresh parsley for garnish (optional)

Instructions

Prepare the Patties: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, salt, pepper, and parsley. Mix until just combined to avoid tough patties. Shape the mixture into 4 oval-shaped patties.

Sear the Patties: In a large skillet over medium heat, add the olive oil. When hot, add the patties. Sear for about 3-4 minutes on each side, or until they’re browned (they don’t need to be cooked through at this point). Remove patties from the skillet and set aside.

Cook the Mushrooms: In the same skillet, add the sliced mushrooms. Sauté until they are tender and browned, about 5-7 minutes.

Make the Gravy: Once the mushrooms are cooked, pour in the beef broth and bring to a simmer. Add the seared patties back into the skillet, spooning some of the mushroom broth over them. Cover and let it simmer for about 10 minutes until the patties are cooked through and have absorbed some of the flavors.

Thicken the Gravy (Optional): If you prefer a thicker gravy, mix cornstarch and cold water to create a slurry. Stir the mixture into the skillet and cook for an additional 2-3 minutes until the gravy has thickened to your liking.

Serve: Plate the Salisbury steaks and spoon the mushroom gravy generously over the top. Garnish with fresh parsley if desired. Serve with mashed potatoes or your favorite side dish.
