For the Salmon Skewers:

1 pound salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon fresh dill, chopped (optional)

For the Blueberry Salsa:

1 cup fresh blueberries, rinsed and drained

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely diced

1/4 cup fresh cilantro, chopped

1 tablespoon honey

1 lime, juiced

Salt and pepper, to taste

Marinate the Salmon: In a medium bowl, mix the olive oil, lemon juice, garlic powder, smoked paprika, salt, pepper, and dill. Add the salmon cubes and gently toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or grill pan over medium-high heat.

      Make the Blueberry Salsa: In a separate bowl, combine the blueberries, red onion, jalapeño, cilantro, honey, lime juice, salt, and pepper. Gently mix, being careful not to mash the blueberries. Set aside to allow the flavors to meld.

        Skewer the Salmon: Thread the marinated salmon cubes onto the skewers. Leave a little space between each piece to ensure even cooking.

          Grill the Skewers: Place the skewers on the hot grill and cook for about 3-4 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm, drizzled with blueberry salsa and garnish with additional fresh dill, if desired.
