Ingredients

1 pound large shrimp, peeled and deveined

½ cup cornstarch

½ cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon black pepper

½ teaspoon white pepper (optional for extra heat)

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 cup vegetable oil (for frying)

2-3 green onions, finely chopped (for garnish)

1 red chili pepper, sliced (for garnish)

Fresh cilantro (for garnish, optional)

Lemon wedges (for serving)

Instructions

Prepare the Shrimp: In a mixing bowl, combine the peeled and deveined shrimp with salt, black pepper, white pepper, garlic powder, onion powder, and paprika. Toss the shrimp to ensure even coating of the spices. Let it marinate for about 15-20 minutes.

Make the Battering Mix: In a separate bowl, whisk together the cornstarch, all-purpose flour, and baking powder until well combined. This dry mix will create the crispy coating for the shrimp.

Coat the Shrimp: Once the shrimp have marinated, take each shrimp and dip it into the batter mix, ensuring it is well coated. Shake off any excess batter.

Heat the Oil: In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until shimmering (approximately 350°F or 175°C). To test if the oil is hot enough, drop a small piece of batter into the oil; it should sizzle immediately.

Fry the Shrimp: Carefully add the coated shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes per side or until golden brown and crispy. Use a slotted spoon to remove the shrimp from the oil and place on a paper towel-lined plate to drain excess oil.

Garnish and Serve: Once all the shrimp are fried, transfer them to a serving platter. Garnish with chopped green onions, sliced red chili peppers, and fresh cilantro if desired. Serve with lemon wedges on the side for a zesty finish.

Enjoy: Serve the crispy salt and pepper shrimp hot as an appetizer or as part of a main dish, and watch them disappear!
