Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 tablespoon vanilla extract

2 large eggs

1 cup butterscotch chips

1/2 cup chopped pecans (optional)

Sea salt flakes for sprinkling

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until thoroughly combined. Set aside.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar together on medium speed until the mixture is light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Then mix in the vanilla extract.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be cautious not to overmix.

Fold in Chips and Pecans: Gently fold in the butterscotch chips and chopped pecans (if using).

Form Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough (about 2 tablespoons each) onto the prepared baking sheets, spacing them about 2 inches apart.

Sprinkle with Sea Salt: Lightly sprinkle a pinch of sea salt flakes on top of each cookie dough ball.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are just set. They may look slightly underbaked, but they will firm up while cooling.

Cool and Enjoy: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious salted butterscotch cookies with a glass of milk or your favorite drink!
