Sausage and Peppers Sheet Pan Bake

1 lb Italian sausage (mild or spicy, as preferred)

2 red bell peppers, sliced

2 yellow bell peppers, sliced

1 large onion, sliced

4 cloves garlic, minced

1 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Fresh baguette or crusty rolls (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Vegetables: In a large bowl, combine the sliced bell peppers, onion, and minced garlic. Drizzle with olive oil, sprinkle with oregano, basil, red pepper flakes, salt, and pepper. Toss to coat evenly.

      Prepare the Sausage: Place the Italian sausages on a large sheet pan. If you like them crispy, you can cut them in half lengthwise.

        Combine Ingredients: Spread the seasoned peppers and onions around and on top of the sausages on the sheet pan. Make sure they are distributed evenly for even cooking.

          Bake: Place the sheet pan in the preheated oven and bake for about 25-30 minutes, or until the sausages are cooked through (internal temperature of 160°F or 71°C) and the veggies are tender and slightly caramelized. Stir halfway through cooking for even browning.

            Serve: Once done, remove from the oven and let it cool slightly. Garnish with freshly chopped parsley. Serve hot with crusty rolls to soak up the delicious juices!
