1 tablespoon olive oil

1 pound Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, undrained

6 cups low-sodium chicken broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 package (9 oz) cheese tortellini

2 cups fresh spinach (or kale)

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped (for garnish)

Heat Oil and Cook Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned and cooked through (about 5-7 minutes). Remove excess fat if necessary.
