Savory Cheddar Broccoli and Chicken Casserole

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets (or frozen, thawed)

1 cup uncooked elbow macaroni

2 cups sharp cheddar cheese, grated

1 cup milk

1 cup chicken broth

1/2 cup sour cream

1/2 cup cream of mushroom soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1 cup bread crumbs (for topping)

2 tablespoons olive oil (for the topping)

1/2 teaspoon paprika (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package directions until al dente. Drain and set aside.

      Blanch the Broccoli: If using fresh broccoli, blanch it in boiling water for 2-3 minutes until bright green. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

        Prepare the Sauce: In a large mixing bowl, combine the milk, chicken broth, sour cream, cream of mushroom soup, garlic powder, onion powder, salt, and black pepper. Whisk until smooth.

          Combine the Ingredients: In a large casserole dish (approximately 9x13 inches), mix the cooked chicken, broccoli florets, and drained macaroni. Pour the sauce over the mixture and stir until everything is evenly coated.

            Add Cheese: Fold in 1.5 cups of the grated cheddar cheese into the mixture. Save the remaining 0.5 cups for topping.

              Prepare the Topping: In a small bowl, mix the bread crumbs with the olive oil until evenly coated. Sprinkle the breadcrumb mixture over the casserole, followed by the reserved cheddar cheese. For an extra kick, sprinkle with paprika if desired.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and the top is golden brown.
