1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, shredded

1/4 cup fresh chives, finely chopped

3/4 cup buttermilk

1 tablespoon honey (optional, for sweetness)

1 large egg (for egg wash, optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

      Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Add Cheese and Chives: Stir in the shredded cheddar cheese and chopped chives until evenly distributed throughout the flour mixture.

          Combine Wet Ingredients: In a separate bowl, mix together the buttermilk and honey (if using). Gradually add this mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; the dough should be slightly sticky.

            Shape the Biscuits: Turn the dough out onto a lightly floured surface. Gently knead it a few times until it holds together. Pat the dough into a 1-inch thick rectangle. Use a biscuit cutter or sharp knife to cut out rounds (or squares) of dough. Place them on the prepared baking sheet, leaving about an inch of space between each biscuit.
