Savory Chicken and Vegetable Stir-Fry

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tbsp vegetable oil (divided)

2 cups broccoli florets

1 bell pepper (red or yellow), sliced into thin strips

1 cup snap peas, trimmed

1 medium carrot, julienned

3 cloves garlic, minced

1 inch ginger, grated

3 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp hoisin sauce

1 tbsp sesame oil

1 tsp cornstarch, mixed with 2 tbsp water (for thickening)

Salt and pepper to taste

Sesame seeds and chopped green onions for garnish (optional)

Instructions
 

Prepare the Chicken: Season the sliced chicken breast with salt and pepper. Set aside.

    Vegetable Prep: Wash and prepare all vegetables. Keep them ready as stir-frying is a quick process.

      Heat the Oil: In a large wok or skillet, heat 1 tbsp of vegetable oil over medium-high heat until shimmering.

        Cook the Chicken: Add the chicken strips to the hot oil. Stir-fry for about 5-7 minutes or until the chicken is cooked through and golden brown. Remove the chicken from the wok and set aside.

          Stir-Fry the Vegetables: In the same wok, add the remaining tablespoon of oil. Add garlic and ginger, stir-frying for about 30 seconds until fragrant. Add the broccoli, bell pepper, snap peas, and carrot to the wok. Stir-fry for an additional 4-5 minutes until the vegetables are crisp-tender.
