Savory Chicken and Vegetable Stir-Fry

1 pound boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 bell pepper (any color), sliced into strips

1 medium carrot, julienned

1 cup broccoli florets

1 cup sugar snap peas

3 cloves garlic, minced

1 inch ginger, grated

2 green onions, chopped

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or noodles for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the sliced chicken, soy sauce, oyster sauce, and cornstarch. Toss well to coat and let it marinate for about 15 minutes.

    Prepare the Vegetables: While the chicken is marinating, wash and cut all the vegetables as noted in the ingredients.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stir-frying briefly until fragrant, about 30 seconds. Then, add the bell pepper, carrot, broccoli, and sugar snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

          Combine Chicken and Vegetables: Return the cooked chicken to the skillet. Drizzle with sesame oil and continue to stir-fry for another 2-3 minutes, making sure everything is well combined and heated through. Season with salt and pepper to taste.

            Serve: Serve the savory chicken and vegetable stir-fry over cooked rice or noodles, garnished with chopped green onions.
