2 large eggplants

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce (store-bought or homemade)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Eggplant: Preheat your oven to 400°F (200°C). Slice the eggplants lengthwise into 1/4-inch thick strips. Place them on a baking sheet, brush both sides with olive oil, and sprinkle with salt. Roast in the oven for about 20 minutes until tender and slightly caramelized.

    Make the Cheese Filling: In a medium bowl, combine the ricotta cheese, 1 cup of the mozzarella cheese, half of the Parmesan cheese, minced garlic, oregano, basil, and a pinch of salt and pepper. Mix well until all ingredients are combined.

      Assemble the Roll-Ups: In an 9x13 inch baking dish, spread 1 cup of marinara sauce evenly across the bottom. Take one roasted eggplant strip, place about 2 tablespoons of the ricotta mixture at one end, and roll it up tightly. Place the roll-up seam side down in the baking dish. Repeat with the remaining eggplant strips and cheese mixture.

        Top with Sauce and Cheese: Once all the roll-ups are placed in the dish, pour the remaining marinara sauce over the top. Sprinkle the rest of the mozzarella and Parmesan cheese evenly over the sauce.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
