Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Juice of 1 lemon

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Grits:

1 cup stone-ground grits

4 cups water or low-sodium chicken broth

1 cup shredded sharp cheddar cheese

1/2 cup heavy cream

2 tablespoons unsalted butter

Salt and pepper, to taste

Instructions

Prepare the Grits:

    - In a medium saucepan, bring 4 cups of water (or broth) to a boil.

      - Slowly whisk in the grits, stirring constantly to prevent lumps.

        - Reduce heat to low and cover, cooking for about 20-25 minutes, stirring occasionally until thickened.

          - Once the grits have reached your desired consistency, stir in the shredded cheddar, heavy cream, unsalted butter, and season with salt and pepper to taste. Keep warm on low heat.

            Cook the Shrimp:

              - In a large skillet, melt 4 tablespoons of butter over medium heat.

                - Add the minced garlic, smoked paprika, and red pepper flakes. Sauté until fragrant, about 1 minute.

                  - Increase the heat to medium-high and add the shrimp to the skillet in a single layer. Season with salt and pepper.

                    - Cook the shrimp for 2-3 minutes on one side until pink, then flip and cook for another 1-2 minutes until fully cooked.

                      - Squeeze the lemon juice over the shrimp and give it a good stir to coat.

                        Assemble the Dish:

                          - Spoon a generous portion of cheesy grits onto each serving plate.

                            - Top with the garlic butter shrimp and drizzle any leftover sauce from the skillet over the top.

                              - Garnish with freshly chopped parsley for added color and flavor.

                                Serve:

                                  - Enjoy your savory garlic butter shrimp and grits while hot, paired with a crisp salad or some crusty bread if desired.
