1 lb ground turkey

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) diced tomatoes (with juices)

1 cup frozen peas and carrots

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until they soften and become fragrant. Add the minced garlic and sauté for an additional minute.

    Brown the Turkey: Push the vegetables to the side and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Make sure to cook it thoroughly and season with salt, pepper, and smoked paprika.
