Savory Mushroom and Swiss Burgers

1 lb ground beef (80/20)

1 cup cremini mushrooms, finely chopped

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme, or 1/2 teaspoon dried thyme

Salt and pepper to taste

4 slices Swiss cheese

4 burger buns

2 tablespoons olive oil

Fresh arugula or spinach, for topping

Optional: Dijon mustard or garlic aioli, for spreading

Instructions
 

Prepare the Vegetables: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onions and garlic, sautéing until the onions are translucent, about 3-4 minutes. Then, add the chopped mushrooms and thyme, cooking until the mushrooms have released their juices and are browned, about 5-7 minutes. Season with salt and pepper. Remove the mixture from heat and let it cool slightly.

    Mix the Burger Patties: In a large bowl, combine the ground beef, Worcestershire sauce, and the sautéed mushroom mixture. Mix gently with your hands until just combined, being careful not to overwork the meat. Divide the mixture into four equal portions and shape them into patties, about ¾-inch thick.

      Cook the Patties: Heat the remaining tablespoon of olive oil in the same skillet over medium-high heat. Once hot, add the burger patties and cook for about 4-5 minutes on one side, until nicely browned. Flip the patties, then place a slice of Swiss cheese on top of each. Cook for an additional 4-5 minutes, or until the burger reaches your desired doneness and the cheese is melted.

        Toast the Buns: While the burgers are finishing, you can toast the burger buns. On another skillet (or on the grill), place the buns cut-side down for 1-2 minutes, until golden brown.

          Assemble Your Burgers: Spread your choice of Dijon mustard or garlic aioli on the bottom half of each bun. Place the burger patty with melted Swiss cheese on top, followed by a handful of fresh arugula or spinach. Finally, cap each burger with the top half of the bun.

            Serve: Serve your savory mushroom and Swiss burgers immediately, accompanied by crispy fries or a side salad.
