1 pound breakfast sausage (spicy or mild, as desired)

1 medium onion, diced

1 bell pepper, diced (red or green)

8 large eggs

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

6 cups day-old bread, cubed (French or Italian loaf works best)

2 cups shredded cheese (Cheddar, Monterey Jack, or a blend)

1 teaspoon dried thyme (optional)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the oven: Begin by preheating your oven to 350°F (175°C).

    Cook the sausage: In a large skillet over medium heat, add the breakfast sausage. Cook until browned and fully cooked, breaking it up into small pieces with a wooden spoon. Drain excess grease if necessary.

      Sauté vegetables: To the same skillet, add the diced onion and bell pepper. Cook until softened and slightly translucent, about 5-7 minutes. Remove from heat and set aside.

        Whisk the eggs: In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, and season with salt and pepper. If desired, add the dried thyme for extra flavor.

          Assemble the casserole: In a greased 9x13 inch baking dish, layer half of the cubed bread evenly on the bottom. Sprinkle half of the cooked sausage and vegetable mixture over the bread. Add half of the shredded cheese. Repeat with the remaining bread, sausage/vegetable mixture, and top with the remaining cheese.

            Pour the egg mixture: Slowly pour the egg mixture evenly over the entire casserole, making sure to coat all layers well. Press down gently with a spatula to ensure the bread absorbs the egg mixture.

              Let it rest: If you have time, let the casserole sit for 15-20 minutes, allowing the bread to absorb the egg mixture better.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set in the middle and the top is golden brown.

                  Garnish and serve: Once baked, allow the casserole to cool for a few minutes. Garnish with chopped fresh chives before serving. Cut into squares and enjoy warm.
