6 large eggs

1 cup whole milk

2 cups baby spinach, chopped

1 cup cherry tomatoes, halved

1 cup diced bell peppers (red, yellow, or green)

1 cup cooked and crumbled breakfast sausage or bacon

1 medium onion, diced

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh herbs for garnish (optional, e.g. parsley or chives)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

      In a large sheet pan, drizzle olive oil and spread the diced onions, bell peppers, and halved cherry tomatoes across the pan. Bake in the preheated oven for about 10 minutes until they begin to soften.

        Remove the sheet pan from the oven and sprinkle the chopped spinach and crumbled sausage (or bacon) evenly over the vegetables.

          Pour the egg mixture over the veggie and meat layer, ensuring it fills all corners of the pan.

            Sprinkle the shredded cheddar cheese evenly on top.

              Return the sheet pan to the oven and bake for an additional 20-25 minutes, or until the eggs are set and the cheese is bubbly and golden brown.

                Once done, remove the pan from the oven and let it cool for a few minutes. Garnish with fresh herbs if desired before slicing into squares or rectangles.
