Savory Vegetable and Cheese Quiche

1 pre-made pie crust (9-inch)

1 cup shredded cheddar cheese

1 cup crumbled feta cheese

1 cup chopped fresh spinach

1 medium zucchini, grated

1 medium red bell pepper, diced

1 small onion, chopped

3 large eggs

1 cup heavy cream

1/2 cup milk

1 teaspoon dried thyme

1/2 teaspoon garlic powder

Salt and pepper, to taste

Olive oil, for sautéing

Instructions
 

Preheat your oven to 375°F (190°C). Place the pre-made pie crust in a 9-inch pie dish and pre-bake it for about 10 minutes, just until slightly golden. Remove from oven and set aside.

    In a medium skillet, heat a splash of olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Add the diced red bell pepper and grated zucchini, cooking for an additional 3-4 minutes until softened. Stir in the chopped spinach and cook just until wilted. Season the mixture with salt, pepper, and thyme, then remove from heat and allow to cool slightly.

      In a large mixing bowl, whisk together the eggs, heavy cream, and milk until well combined. Add in garlic powder, salt, and pepper to taste.

        Spread the sautéed vegetable mixture evenly over the pre-baked pie crust. Sprinkle the shredded cheddar and crumbled feta cheeses on top of the vegetables. Pour the egg and cream mixture over the filled crust, ensuring it evenly covers the filling.

          Bake the quiche in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown. A knife inserted into the center should come out clean.

            Once done, remove the quiche from the oven and let it cool for about 10 minutes. This will make it easier to slice.
