1 lb boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 cup bell peppers (sliced, mixed colors)

1 cup broccoli florets

1 cup snap peas

1 medium carrot (julienned)

2 cloves garlic (minced)

1 teaspoon ginger (grated)

2 green onions (sliced)

Salt and pepper to taste

Sesame seeds for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine sliced chicken with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 15 minutes.

    Prep the Veggies: While the chicken marinates, wash and cut all vegetables as directed. Set them aside.

      Heat the Oil: In a large wok or non-stick pan, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Chicken: Add the marinated chicken to the hot oil, cooking until it is browned and cooked through, approximately 5-7 minutes. Remove the chicken from the wok and set aside.

          Stir-Fry the Vegetables: In the same wok, add the remaining tablespoon of oil. Stir-fry the bell peppers, broccoli, snap peas, carrot, garlic, and ginger for about 3-5 minutes or until they are crisp-tender.

            Combine Ingredients: Return the cooked chicken to the pan with the vegetables, add green onions, and season with salt and pepper. Stir everything together and cook for an additional 2 minutes to combine the flavors.

              Serve: Garnish with sesame seeds if desired and serve hot over cooked rice or noodles.
