4 large russet potatoes, thinly sliced

1 medium onion, finely chopped

2 cups heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

3 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter.

    Prepare the Potatoes: Peel and thinly slice the russet potatoes (approximately 1/8-inch thick). Rinse the slices in cold water to remove excess starch and pat dry with paper towels.

      Sauté the Onions: In a saucepan over medium heat, melt 3 tablespoons of butter. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

        Make the Cream Mixture: In the same saucepan, stir in the heavy cream and milk. Add thyme, salt, pepper, and nutmeg. Bring the mixture to a gentle simmer while stirring occasionally.

          Layer the Ingredients: In the prepared baking dish, begin layering with a third of the potato slices, followed by half of the sautéed onion mixture. Sprinkle a portion of the shredded cheddar and grated Parmesan cheese over the top. Repeat the layers, finishing with a final layer of potatoes on top.
