2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon sriracha (optional, for heat)

1 cup water chestnuts, diced (about 1 can)

1/2 cup green onions, finely chopped

1/2 cup shredded carrots

1/4 cup cilantro, chopped (for garnish)

1 head of Butter or Iceberg lettuce (for wraps)

Sesame seeds (for garnish)

Prepare the Lettuce Wraps: Carefully separate the leaves from the head of lettuce, rinse them under cold water, and pat them dry with a paper towel. Set aside.

    Cook the Chicken: In a large skillet, heat the sesame oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

      Add Ground Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for about 5–7 minutes, or until the chicken is fully cooked and no longer pink.
