4 salmon fillets (6 oz each)

1 lb asparagus, trimmed

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Lemon slices, for garnish

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and black pepper.

      Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them, ensuring they are well coated. Let them marinate for about 15 minutes while you prepare the asparagus.

        Prepare the Asparagus: In a medium bowl, toss the trimmed asparagus with the remaining 2 tablespoons of olive oil, a pinch of salt, and black pepper until well coated.

          Arrange on the Baking Sheet: Arrange the marinated salmon fillets on one side of the prepared baking sheet. On the other side, spread the seasoned asparagus evenly.

            Bake: Place the sheet pan in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender yet crisp.

              Serve: Once done, remove the baking sheet from the oven. Garnish the salmon with fresh lemon slices and chopped parsley. Serve immediately, drizzling any remaining pan juices over the top for extra flavor.
