Ingredients

For the Grits:

1 cup stone-ground grits

4 cups water or chicken broth

1 cup shredded sharp cheddar cheese

1/2 cup heavy cream

2 tablespoons unsalted butter

Salt and pepper to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 cloves garlic, minced

3 tablespoons unsalted butter

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

1 tablespoon lemon juice

Salt and pepper to taste

2 green onions, finely chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Grits:

    - In a medium saucepan, bring the water or chicken broth to a boil over medium-high heat.

      - Once boiling, slowly whisk in the stone-ground grits. Reduce heat to low and cover, stirring occasionally for about 15-20 minutes, until the grits are thick and creamy.

        - Once cooked, stir in the cheese, heavy cream, butter, and season with salt and pepper. Keep warm.

          Cook the Shrimp:

            - In a large skillet, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

              - Add the shrimp, smoked paprika, cayenne pepper, lemon juice, and season with salt and pepper. Cook the shrimp for about 3-4 minutes, stirring occasionally, until they turn pink and are cooked through.

                - If desired, pour in additional butter for a richer sauce and stir to combine, allowing the shrimp to soak up the flavors.

                  Combine and Serve:

                    - Divide the creamy grits into serving bowls. Top generously with the garlic butter shrimp.

                      - Garnish with chopped green onions and fresh parsley for a pop of color and extra flavor.

                        Enjoy!

                          - Serve immediately while warm for a comforting and delicious meal.
