Ingredients
  

1 large cucumber

1 ripe avocado

8 oz cooked shrimp, peeled and deveined

1/4 cup red onion, finely diced

1/2 cup cherry tomatoes, quartered

1/4 cup corn (fresh or frozen)

1/4 cup cilantro, chopped

1 lime, juiced

Salt and pepper to taste

Optional: hot sauce for drizzling

Instructions
 

Prepare the Cucumber: Slice the cucumber in half lengthwise and scoop out the seeds with a spoon to create a hollow boat. Set aside.

    Make the Filling: In a mixing bowl, combine the cooked shrimp, red onion, cherry tomatoes, corn, and cilantro.

      Add the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into the mixing bowl. Mash gently with a fork while mixing the other ingredients.

        Season the Mixture: Add lime juice, salt, and pepper to taste. Stir until everything is well combined, but still chunky.

          Fill the Cucumber Boats: Generously spoon the shrimp and avocado mixture into the hollowed cucumber halves.

            Garnish & Serve: Drizzle with hot sauce if desired, and sprinkle some extra cilantro on top. Serve immediately as a refreshing appetizer or light meal!
