1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Optional: 1 jalapeño pepper, seeded and finely chopped for heat

Prepare the Shrimp: In a medium-sized pot, bring water to a boil and add a pinch of salt. Add the shrimp and cook for 2-3 minutes or until they turn pink and opaque. Drain and rinse under cold water to stop cooking. Set aside.

    Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, minced garlic, salt, and pepper. Adjust seasoning according to taste.

      Combine the Ingredients: In a large mixing bowl, gently toss the diced avocados, cherry tomatoes, red onion, cooked shrimp, and chopped cilantro. If you prefer extra heat, sprinkle in the finely chopped jalapeño.

        Dress the Salad: Pour the lime dressing over the salad mixture and toss gently to coat all ingredients evenly, ensuring not to mash the avocados.
