Shrimp Dirty Rice

1 pound shrimp, peeled and deveined

1 cup long-grain rice

1/2 pound smoked sausage, diced

1 cup chicken broth

1 medium onion, diced

1 bell pepper (green or red), diced

2 celery stalks, diced

3 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper (adjust to taste)

1 tablespoon olive oil

2 green onions, chopped (for garnish)

Salt and pepper to taste

Prepare the Rice: Rinse the long-grain rice under cold water until the water runs clear. Set aside.

    Cook the Sausage: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced smoked sausage and sauté until browned, about 5 minutes. Remove the sausage from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion, bell pepper, and celery. Sauté for about 4-5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.

        Add Seasonings: Sprinkle the Cajun seasoning, dried thyme, and cayenne pepper over the veggies. Stir well to coat the vegetables with the spices.

          Cook the Rice: Add the rinsed rice to the skillet, stirring to combine with the vegetables. Pour in the chicken broth, and bring to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes.

            Add the Shrimp: After 15 minutes, uncover the skillet and add the shrimp and the previously cooked sausage. Stir everything gently, cover again, and cook for another 5-7 minutes, or until the shrimp turn pink and the rice is tender. Season with salt and pepper to taste.

              Serve: Remove from heat and let it sit covered for a few minutes. Fluff the rice with a fork, garnish with chopped green onions, and serve hot.
