Shrimp Lettuce Wraps with Watermelon Glaze

For the Shrimp:

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ginger, minced

1 teaspoon soy sauce

1 teaspoon lime juice

Salt and pepper, to taste

For the Watermelon Glaze:

1 cup watermelon, pureed

2 tablespoons honey

1 tablespoon apple cider vinegar

1 teaspoon lime zest

A pinch of salt

For the Wraps:

1 head butter or romaine lettuce (for the cups)

1 carrot, julienned

1 cucumber, julienned

Fresh cilantro, for garnish

Chopped peanuts, for topping (optional)

Instructions
 

Prepare the Watermelon Glaze: In a small saucepan, combine the pureed watermelon, honey, apple cider vinegar, lime zest, and salt. Cook over medium heat, stirring occasionally, for about 5-7 minutes until it thickens slightly. Remove from heat and set aside to cool.

    Marinate the Shrimp: In a medium bowl, combine the shrimp with olive oil, minced garlic, minced ginger, soy sauce, lime juice, salt, and pepper. Toss to coat the shrimp evenly. Let it marinate for about 15 minutes.

      Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from heat.

        Assemble the Wraps: Lay out individual lettuce leaves on a serving platter. Place a few shrimp in each lettuce leaf, then top with julienned carrots, cucumber, and a drizzle of the watermelon glaze.

          Garnish and Serve: Sprinkle fresh cilantro and chopped peanuts on top for added flavor and crunch. Serve immediately with extra watermelon glaze on the side.
