Ingredients

12 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

3 tbsp olive oil

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust for heat preference)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 large lemon

Zest of 1 lemon

Salt and pepper to taste

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese (optional)

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Sauté Garlic: In a large skillet or pan over medium heat, melt the butter and olive oil together. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until the garlic is fragrant but not browned.

Cook the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes until fully opaque and cooked through.

Add Wine and Lemon: Pour in the dry white wine, allowing it to simmer for 2-3 minutes to reduce slightly. Then, add the lemon juice and zest, stirring everything together to combine flavors.

Combine with Linguine: Reduce the heat to low, then add the cooked linguine to the skillet. Toss gently to coat evenly with the sauce. If the dish seems a bit dry, add a splash of the reserved pasta water to achieve the desired consistency.

Finish with Herbs and Cheese: Remove the skillet from heat and stir in the chopped parsley. For a richer flavor, sprinkle in the grated Parmesan cheese and toss to combine.

Serve: Plate the shrimp scampi linguine, garnishing with extra parsley or Parmesan as desired. Enjoy with a slice of crusty bread to soak up the delicious sauce!
