For the Panna Cotta:

1 cup heavy cream

1 cup whole milk

1/2 cup granulated sugar

1 packet (2 1/4 teaspoons) unflavored gelatin

1 teaspoon vanilla extract

Pinch of salt

2 ripe bananas, pureed

For the Caramel Sauce:

1 cup granulated sugar

1/4 cup water

1/2 cup heavy cream

2 tablespoons unsalted butter

1/4 teaspoon sea salt

1 teaspoon vanilla extract

For Garnish:

Sliced ripe bananas

Whipped cream

Chopped nuts (optional)

Instructions
 

Prepare the Panna Cotta:

    - In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water and let it bloom for about 5-10 minutes.

      - In a saucepan over medium heat, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt. Stir until the sugar is dissolved, and do not let it boil.

        - Remove the saucepan from heat. Add the bloomed gelatin, stirring until fully dissolved.

          - Stir in the vanilla extract and the pureed bananas until smooth.

            - Pour the mixture into individual serving cups or ramekins. Cover them with plastic wrap and refrigerate for at least 4 hours, or until set.

              Make the Caramel Sauce:

                - In a medium saucepan, combine the granulated sugar and water over medium heat. Stir gently until the sugar dissolves, then increase the heat to high and let it boil without stirring until it turns a deep amber color (about 8-10 minutes).

                  - Once the desired color is reached, remove the saucepan from heat and carefully whisk in the heavy cream (it will bubble vigorously).

                    - Add the butter, sea salt, and vanilla extract, stirring until smooth and combined. Allow to cool slightly to thicken.

                      Serve the Panna Cotta:

                        - Once the panna cotta has set, carefully remove it from the refrigerator. If using ramekins, you can run a small knife around the edge to loosen it or briefly dip the bottom of the ramekin in hot water to help release it.

                          - Drizzle the warm caramel sauce over the panna cotta and top with sliced bananas.

                            - If desired, add a dollop of whipped cream and sprinkle with chopped nuts for added crunch.
