Ingredients

4 salmon fillets (about 6 oz each)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko for extra crunch recommended)

2 tablespoons fresh parsley, chopped

1 tablespoon lemon zest

2 tablespoons olive oil

2 cloves garlic, minced

Salt and black pepper to taste

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Topping: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, chopped parsley, lemon zest, minced garlic, olive oil, and a pinch of salt and pepper. Mix well until the mixture resembles moist sand.

Season the Salmon: Place the salmon fillets skin-side down on the prepared baking sheet. Season the top of each fillet with salt and pepper.

Add the Topping: Evenly spoon the Parmesan mixture over the top of each salmon fillet, pressing it down gently to adhere.

Bake the Salmon: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown and crispy. (Cooking time may vary slightly based on the thickness of the fillets).

Serve: Once baked, remove the salmon from the oven and let it rest for a minute. Serve hot with lemon wedges on the side for squeezing over the top. Enjoy!
