1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cups mushrooms, sliced (such as cremini or button)

2 cloves garlic, minced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

12 oz egg noodles

Fresh parsley, chopped (for garnish)

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef sirloin in batches for even cooking. Sear until browned on the outside (about 2-3 minutes). Remove the beef from the skillet and set aside.
