1 cup fig jam

4 large flour tortillas

1 cup shredded sharp cheddar cheese

1 cup mascarpone cheese

2 tablespoons fresh rosemary, finely chopped

2 tablespoons unsalted butter

Pinch of salt

Optional: balsamic glaze for drizzling

Prepare the Filling: In a medium bowl, mix the mascarpone cheese with the chopped rosemary and a pinch of salt until well blended. This will create a herby, creamy base for your quesadillas.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. Spread 1/2 cup of fig jam on each tortilla, smoothing it out with a spatula. On top of the fig jam, carefully layer 1/2 cup of shredded cheddar cheese and half of the mascarpone cheese mixture. Top with another tortilla to form a sandwich.

      Heat the Pan: In a large skillet, melt 1 tablespoon of butter over medium heat until bubbly.

        Cook the Quesadillas: Carefully place one quesadilla in the skillet. Cook for about 3-4 minutes or until the bottom is golden brown and the cheese starts to melt. Flip the quesadilla and add the remaining butter if necessary. Cook for another 3-4 minutes. Repeat with the second quesadilla.
