The foundation of any great dish lies in its seasonings. For our Zesty Grilled Zucchini Parmesan, salt, pepper, and Italian seasoning play pivotal roles in transforming simple ingredients into a tantalizing treat. Salt is essential for drawing out the natural moisture from the zucchini, intensifying its flavor. Freshly cracked black pepper adds a hint of heat, while Italian seasoning—comprised of herbs like oregano, basil, and thyme—introduces a bouquet of aromatic flavors that complement the zucchini beautifully.

Ingredients

4 medium zucchini, sliced into 1/4-inch thick rounds

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1 cup grated Parmesan cheese

1/2 cup marinara sauce (optional for dipping)

Fresh basil leaves for garnish (optional)

Instructions

Preheat Grill: Start by preheating your grill to medium-high heat.

Prepare Zucchini: In a large bowl, combine the sliced zucchini with olive oil, garlic powder, salt, pepper, and Italian seasoning. Toss until the zucchini is evenly coated.

Grill Zucchini: Place the zucchini slices directly on the grill. Grill for about 3-4 minutes on each side, or until nice grill marks appear and they become tender.

Add Cheese: Once the zucchini is cooked, remove it from the grill and immediately sprinkle the grated Parmesan cheese generously on top of each slice. Return them to the grill for an additional 1-2 minutes, allowing the cheese to melt and become bubbly.

Serving: Once the cheese is melted to your liking, remove the zucchini from the grill. Arrange on a serving platter and garnish with fresh basil leaves, if desired.

Optional Dip: Serve with marinara sauce on the side for dipping, enhancing the flavors!
