Simple Neapolitan Quesadillas

Ingredients
  

4 large flour tortillas

1 cup shredded mozzarella cheese (preferably fresh)

1 cup ricotta cheese

1 cup thinly sliced cherry tomatoes

1/2 cup fresh basil leaves, chopped

2 tbsp olive oil

1 tsp garlic powder

Salt and pepper to taste

Balsamic glaze for drizzling (optional)

Instructions
 

Prepare the Filling: In a medium bowl, combine the ricotta cheese with garlic powder, salt, and pepper. Mix until smooth and set aside.

    Assemble the Quesadillas: Lay out two tortillas on a flat surface. Spread half of the ricotta mixture evenly on each tortilla. Sprinkle half of the mozzarella cheese over the ricotta. Top with sliced cherry tomatoes and chopped basil.

      Top with Tortillas: Place the remaining tortillas on top of the filled ones, pressing down gently.

        Cook the Quesadillas: Heat 1 tbsp of olive oil in a large skillet over medium heat. Carefully place one quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with the second quesadilla, adding more olive oil if necessary.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool slightly. Cut into wedges. Drizzle with balsamic glaze if desired.
