4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, or thyme)

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon paprika (for seasoning the chicken)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Oven and Chicken: Preheat your oven to 375°F (190°C). Place chicken breasts on a cutting board. With a sharp knife, carefully slice each breast horizontally to create a pocket, being sure not to cut all the way through.

    Make the Filling: In a mixing bowl, combine chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, Italian herbs, salt, and pepper. Mix until well combined and creamy.

      Stuff the Chicken: Generously fill each chicken breast pocket with the spinach-cheese mixture, making sure to close the openings slightly so the filling doesn’t escape during cooking.

        Season the Chicken: Rub olive oil on the outside of each chicken breast. Sprinkle paprika, salt, and pepper over the top to enhance flavor.

          Bake: Place stuffed chicken breasts in a greased baking dish. Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the tops are lightly golden.

            Serve: Once cooked, remove from the oven and let rest for a few minutes. Garnish with freshly chopped parsley. Slice and serve warm with your choice of side dishes like roasted vegetables or a simple salad.
