Ingredients

4 whole wheat tortillas

1 cup shredded cheddar cheese (or your child’s favorite cheese)

1/2 cup diced bell peppers (variety of colors)

1/2 cup finely chopped spinach (or any leafy green)

1/4 cup corn kernels (fresh or canned)

1/4 cup black beans, rinsed and drained

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

Olive oil or cooking spray for frying

Optional: Salsa or guacamole for dipping

Instructions

Prep the Veggies: Start by washing and finely chopping the bell peppers and spinach. If using canned corn and black beans, drain and rinse them thoroughly.

Mix the Filling: In a large mixing bowl, combine the chopped bell peppers, spinach, corn kernels, black beans, cumin, garlic powder, and a pinch of salt and pepper. Stir well until everything is evenly mixed.

Assemble the Quesadillas: On a clean surface, lay a tortilla flat. Sprinkle a generous amount of cheddar cheese on one half of the tortilla. Add a spoonful of the veggie mixture on top of the cheese, then fold the tortilla over to cover the filling.

Cook the Quesadillas: Heat a non-stick skillet over medium heat and lightly coat with olive oil or cooking spray. Place the folded quesadilla in the skillet and cook for about 2-3 minutes on one side, or until golden brown and the cheese starts to melt.

Flip and Finish: Carefully flip the quesadilla using a spatula and cook for an additional 2-3 minutes on the other side until it is golden and crunchy. Remove from the skillet and let cool slightly before cutting into wedges.

Serve: Cut the quesadilla into triangles and serve warm with salsa or guacamole for dipping. Make sure to involve your little chefs in the tasting process!
