Skillet Beef and Cheddar Quesadillas

1 lb ground beef

1 cup shredded sharp cheddar cheese

4 large flour tortillas

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 tablespoon taco seasoning

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil (divided)

Fresh cilantro, chopped (for garnish)

Salsa, sour cream, and guacamole (for serving)

Instructions
 

Sauté the Meat: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until it starts to soften. Add the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.

    Add the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a spatula, cooking until browned and fully cooked through (approximately 6-8 minutes). Drain any excess fat.

      Season the Mixture: Sprinkle the taco seasoning, cumin, salt, and pepper over the beef mixture. Stir well to evenly coat. Allow to cook for another minute, then remove from heat and set aside.

        Assemble Quesadillas: In a separate skillet (can use the same one after cleaning), heat the remaining tablespoon of olive oil over medium heat. Place one flour tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the surface.

          Add Filling: Spoon half of the beef mixture over the cheese, then top with another layer of cheddar cheese. Carefully place another tortilla on top.

            Cook Quesadilla: Cook for about 3-4 minutes on one side until the bottom is golden brown and the cheese begins to melt. Flip carefully with a spatula and cook for another 3-4 minutes until the second side is golden and the cheese is fully melted.

              Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining two tortillas and filling.

                Slice and Serve: Allow the quesadillas to cool slightly, then slice into wedges. Garnish with fresh cilantro and serve with salsa, sour cream, and guacamole on the side.
