Slow Cooker Balsamic Chicken Thighs

6 bone-in, skin-on chicken thighs

1 cup balsamic vinegar

1/4 cup honey

4 cloves garlic, minced

1 tablespoon Dijon mustard

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

2 cups baby spinach (optional, for serving)

Fresh basil leaves for garnish

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season both sides with salt and pepper. This step ensures a good sear and flavor absorption.

    Make the Marinade: In a medium bowl, whisk together the balsamic vinegar, honey, minced garlic, Dijon mustard, olive oil, oregano, and thyme until well combined.

      Sear the Chicken (Optional): In a skillet over medium-high heat, add a tablespoon of olive oil. Once hot, sear the chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 3-4 minutes. This step enhances flavor, but you can skip it if you're short on time.

        Slow Cook the Chicken: Transfer the seared (or raw) chicken thighs to the slow cooker. Pour the balsamic marinade over the chicken, ensuring each piece is well coated.

          Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and cooked through, reaching an internal temperature of 165°F (75°C).

            Add Spinach (Optional): If you're using baby spinach, about 30 minutes before serving, stir in the spinach to wilt it into the dish.

              Serve: Once cooked, remove the chicken thighs from the slow cooker and serve them on a bed of spinach if desired. Drizzle with the balsamic sauce from the slow cooker and garnish with fresh basil leaves.
