Slow Cooker Charcuterie Chili

1 lb ground beef

1 lb Italian sausage, casings removed

1 cup diced pancetta

1 medium onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (28 oz) crushed tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup beef broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese (for topping)

1/2 cup sliced pepperoni (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Meats: In a large skillet over medium-high heat, brown the ground beef and Italian sausage until fully cooked, breaking them apart as they cook. Drain any excess grease and transfer the mixture to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced pancetta and cook until crispy. Add the onion, garlic, and bell peppers to the skillet. Sauté until the onions are translucent and the peppers have softened, about 5 minutes. Transfer the vegetable mixture into the slow cooker with the meat.

      Combine Ingredients: Add the crushed tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, smoked paprika, salt, and pepper to the slow cooker. Stir everything together until well mixed.

        Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chili is thickened and the flavors have melded beautifully.

          Serve and Top: Once the chili is done, give it a good stir. Ladle the chili into bowls and top with shredded cheddar cheese, sliced pepperoni, and fresh parsley.
