Slow Cooker Chicken Fajita Chili

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chiles

1 bell pepper (any color), sliced

1 onion, chopped

3 cloves garlic, minced

2 cups low-sodium chicken broth

2 tablespoons chili powder

1 tablespoon cumin

1 tablespoon smoked paprika

1 teaspoon oregano

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

Fresh cilantro, chopped for garnish

Optional toppings: avocado slices, shredded cheese, sour cream, tortilla chips

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of the slow cooker.

    Layer Ingredients: On top of the chicken, add the black beans, kidney beans, diced tomatoes (with juices), sliced bell pepper, chopped onion, and minced garlic.

      Season: In a small bowl, mix together the chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Sprinkle this spice mixture evenly over the ingredients in the slow cooker.

        Add Broth: Pour the chicken broth over all the ingredients in the slow cooker.

          Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is fully cooked and tender.

            Shred Chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker and mix well.

              Finish with Lime: Squeeze the juice of one lime into the chili and stir.
