1 packet (1 oz) taco seasoning

1 medium onion, diced

2 garlic cloves, minced

2 cups chicken broth

1 bell pepper (red or green), diced

1 cup salsa (mild, medium, or hot based on preference)

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish)

Shredded cheese (optional, for serving)

Sour cream (optional, for serving)

Tortilla chips (optional, for serving)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

Add the Vegetables: Layer in the black beans, corn, diced tomatoes (with juice), diced onion, minced garlic, diced bell pepper, and salsa on top of the chicken.

Season the Soup: Sprinkle the taco seasoning, cumin, chili powder, salt, and pepper evenly over the ingredients in the slow cooker.

Pour the Broth: Gently pour the chicken broth over everything, ensuring that the seasoning and ingredients are well-distributed.

Cook: Cover the slow cooker and set it on low heat for 6-7 hours or on high heat for 3-4 hours until the chicken is cooked through and tender.

Shred the Chicken: About 30 minutes before serving, remove the chicken breasts, shred them with two forks, and stir them back into the soup.

Final Tasting: Adjust seasoning if necessary; add more salt or pepper if needed.

Serve: Ladle the soup into bowls and top with fresh cilantro, avocado slices, shredded cheese, sour cream, and tortilla chips, if using.
