2 lbs boneless, skinless chicken thighs

1 medium onion, diced

2 cloves garlic, minced

4 cups low-sodium chicken broth

2 cups carrots, sliced

2 cups celery, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon Worcestershire sauce

1 cup frozen peas

1 cup heavy cream

1/4 cup chopped fresh parsley (for garnish)

Salt and pepper to taste

1 package refrigerated biscuit dough (or homemade dumplings)

Instructions
 

Prepare the Slow Cooker: In your slow cooker, place the boneless chicken thighs as the base layer.

    Add Vegetables: Add the diced onion, garlic, sliced carrots, and celery over the chicken.

      Season: Sprinkle the dried thyme, dried rosemary, salt, and pepper on top. Next, drizzle the Worcestershire sauce over the contents.

        Pour in the Broth: Carefully pour the chicken broth over all the ingredients, ensuring they're mostly submerged.

          Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shreds apart.

            Shred the Chicken: About 30 minutes before serving, remove the chicken thighs from the slow cooker and shred them using two forks. Return the shredded chicken back into the cooker.

              Add Cream: Stir in the heavy cream and frozen peas, mixing well to combine.

                Dumplings: Prepare the biscuit dough as per the package instructions. Cut or pull the dough into small balls, and drop them gently on top of the creamy mixture in the slow cooker.

                  Finish Cooking: Cover and cook on high for an additional 30 minutes, or until the dumplings are cooked through and fluffy.

                    Garnish and Serve: Once done, sprinkle chopped parsley on top for freshness. Serve hot with a side of crusty bread if desired.
