1 lb boneless, skinless chicken thighs (or beef, if preferred)

2 cups Hatch green chilies, roasted and diced (or canned green chiles)

1 medium onion, diced

4 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 cup corn, frozen or fresh

1 can (14.5 oz) diced tomatoes with green chilies

1 cup low-sodium chicken or vegetable broth

2 tsp ground cumin

2 tsp chili powder

1 tsp smoked paprika

Salt and pepper to taste

2 cups cooked brown rice or quinoa

1 cup shredded cheese (cheddar, Monterey Jack, or your choice)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Slow Cooker: Start by placing the chicken thighs (or beef) at the bottom of your slow cooker. This will help them cook evenly and absorb the flavors.

    Combine Ingredients: In a large bowl, mix together the diced Hatch green chilies, onion, garlic, black beans, corn, diced tomatoes (with their juice), chicken broth, cumin, chili powder, smoked paprika, salt, and pepper.

      Add to Slow Cooker: Pour the mixture over the chicken in the slow cooker, ensuring the chicken is well-covered.

        Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

          Shred the Chicken: Once cooked, remove the chicken from the slow cooker, shred it using two forks, then return it to the pot. Stir everything together gently to combine.

            Prepare the Bowls: To serve, layer cooked brown rice or quinoa in a bowl, then top with the Hatch chili mixture.
