1 lb ground beef (80/20 blend for optimal juiciness)

Salt and pepper, to taste

4 slices of American cheese (or your favorite cheese)

4 burger buns (preferably brioche)

2 tablespoons vegetable oil (for cooking)

For the Pickled Onions:

1 medium red onion, thinly sliced

1 cup apple cider vinegar

1 cup water

1 tablespoon granulated sugar

1 teaspoon salt

1 teaspoon peppercorns (optional)

1 teaspoon mustard seeds (optional)

Toppings:

Lettuce leaves

Sliced tomatoes

Ketchup and mustard, to taste

Instructions
 

Pickle the Onions:

    - In a saucepan, combine the apple cider vinegar, water, granulated sugar, salt, peppercorns, and mustard seeds. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.

      - Place the thinly sliced red onion in a jar or a bowl. Pour the hot liquid over the onions, making sure they are fully submerged. Let cool on the counter, then refrigerate for at least 30 minutes before serving (they'll taste even better if left overnight).

        Prepare the Burger Patties:

          - Take the ground beef and divide it into four equal portions (about 4 oz each). Gently form each portion into a loosely packed ball; do not overwork the meat as this can make the burgers tough.

            - Season each ball generously with salt and pepper.

              Cook the Smash Burgers:

                - Heat a cast-iron skillet or griddle over medium-high heat. Add the vegetable oil and allow it to heat until shimmering.
