Smashed Avocado Summer Rolls

2 ripe avocados

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon salt, or to taste

1/4 teaspoon black pepper

8 rice paper wrappers

1 cup cooked vermicelli noodles

1 cup finely shredded carrots

1 cup cucumber, thinly sliced

1/2 cup fresh mint leaves

1/2 cup fresh cilantro leaves

1/2 cup red bell pepper, thinly sliced

Sesame seeds, for garnishing

Optional: Peanut or hoisin sauce for dipping

Instructions
 

Prep the Avocado Mixture:

    In a bowl, scoop out the ripe avocados and mash them with lime juice, garlic powder, salt, and black pepper until creamy but still slightly chunky. Set aside.

      Prepare the Rice Paper:

        Fill a shallow dish or a large plate with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds or until it's pliable, then carefully transfer it to a clean surface.

          Layer the Ingredients:

            In the lower third of the rice paper, layer a small portion of cooked vermicelli noodles, followed by a handful of shredded carrots, cucumber slices, mint leaves, cilantro leaves, and red bell pepper strips. Finally, add a generous tablespoon of the smashed avocado mixture on top.

              Roll It Up:

                Starting from the lower edge, fold the rice paper over the filling, rolling tightly but gently to keep the ingredients from spilling out. Fold in the sides and continue rolling until it’s fully wrapped. Repeat this process with the remaining rice paper sheets and fillings.

                  Serve and Garnish:

                    Arrange the summer rolls on a serving platter. Sprinkle sesame seeds over the top for additional flavor and crunch. If desired, serve with peanut or hoisin sauce for dipping.
