Sour Cream and Onion Potato Casserole

4 large russet potatoes, peeled and thinly sliced

1 cup sour cream

1 cup Greek yogurt

1 cup grated sharp cheddar cheese

1 medium onion, finely chopped

3 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon salt (to taste)

½ teaspoon black pepper

1 cup crispy fried onions (store-bought or homemade)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C). Grease a 9x13 inch casserole dish with a little olive oil.

    Prepare the potato layer: In a large bowl, toss the sliced potatoes with salt, black pepper, garlic powder, and onion powder until evenly coated.

      Sauté the onions: In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5-7 minutes, or until the onions are golden and caramelized. Set aside.

        Mix the creamy base: In a separate bowl, combine the sour cream, Greek yogurt, and half of the grated cheddar cheese. Stir well until all ingredients are fully mixed.

          Layer the casserole: Start by adding a layer of the seasoned potato slices at the bottom of your greased casserole dish. Spread half of the creamy mixture on top, followed by half of the sautéed onions. Repeat the layers: potatoes, creamy mixture, and onions.

            Finish with cheese and fried onions: For the final layer, top it with the remaining potato slices. Pour any remaining creamy mixture over the top. Sprinkle the rest of the cheddar cheese on top, followed by the crispy fried onions.
