1 medium head of green cabbage, chopped

3 tablespoons olive oil or bacon grease

1 pound smoked sausage (such as kielbasa or andouille), sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for heat preference)

1 teaspoon onion powder

1 teaspoon garlic powder

1 tablespoon apple cider vinegar

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preparation: Start by removing the outer leaves of the cabbage. Chop the cabbage into bite-sized pieces and set aside. Slice the smoked sausage into rounds and set aside.

    Cook the Sausage: In a large skillet or Dutch oven, heat 1 tablespoon of olive oil or bacon grease over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes, stirring occasionally to prevent sticking. Remove the sausage from the pan and set it aside.

      Sauté the Onions and Garlic: In the same skillet, add the remaining olive oil or bacon grease. Add the sliced onion and sauté for 5 minutes, or until the onions are soft and translucent. Add the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

        Add the Cabbage: Stir in the chopped cabbage and toss to combine with the onions and garlic. Cook, stirring occasionally, for about 10-15 minutes or until the cabbage is tender and slightly caramelized.

          Season the Dish: Sprinkle in the onion powder, garlic powder, apple cider vinegar, and add salt and pepper to taste. Return the cooked sausage to the skillet and mix well. Continue to cook for another 5 minutes to allow the flavors to meld.

            Serve: Remove the skillet from heat. Taste and adjust seasoning if necessary. Garnish with fresh chopped parsley before serving.
