1 red bell pepper, diced

1/2 cup cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

4 cups mixed greens (like romaine and spinach)

Tortilla strips or corn chips (for garnish, optional)

Instructions
 

Prepare the Chicken: If not already done, cook the chicken breast thoroughly (grilling or boiling works well), let it cool, and shred it into bite-sized pieces.
