For the Salad:

4 cups mixed greens (romaine, spinach, and arugula)

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

½ cup red onion, thinly sliced

½ cup shredded cheddar cheese

¼ cup cilantro leaves, chopped

1 jalapeño pepper, finely diced (optional for extra heat)

For the Dressing:

¼ cup olive oil

2 tablespoons lime juice (freshly squeezed)

1 teaspoon honey or agave syrup

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Prepare the Salad Base: In a large salad bowl, combine the mixed greens, cherry tomatoes, black beans, corn, red bell pepper, diced avocado, and red onion. Toss gently to mix the ingredients evenly.

    Make the Dressing: In a small mixing bowl, whisk together the olive oil, lime juice, honey (or agave), ground cumin, chili powder, salt, and pepper until well combined and smooth.

      Combine: Pour the dressing over the salad and toss gently to coat all the ingredients evenly, ensuring the dressing is distributed throughout.

        Garnish: Add the shredded cheddar cheese, chopped cilantro, and diced jalapeño (if using) on top of the salad. Optionally, sprinkle with additional salt and pepper to taste.

          Serve: Serve immediately for maximum freshness, or chill for 15 minutes to allow flavors to meld.
