1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper, to taste

1 small onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon sugar (optional)

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Squash: Cut the spaghetti squash in half lengthwise. Scoop out the seeds using a spoon and discard them. Drizzle the inside of each half with olive oil, and sprinkle with salt and pepper.

      Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-35 minutes, or until the flesh is tender and shreds easily with a fork.

        Make the Marinara Sauce: While the squash is roasting, heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute, just until fragrant.

          Add Tomatoes and Season: Pour in the crushed tomatoes, then add dried basil, oregano, and sugar (if using). Stir to combine and bring to a gentle simmer. Let the sauce cook for about 15-20 minutes, stirring occasionally, to allow the flavors to meld. Finish with balsamic vinegar and adjust salt and pepper to taste.

            Shred the Squash: Once cooked, remove the squash from the oven and let it cool for a few minutes. Using a fork, gently shred the flesh of the squash to create spaghetti-like strands.

              Combine and Serve: In a large serving dish, mix the shredded spaghetti squash with the marinara sauce until well combined. Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
