Made with shredded rotisserie chicken, flavorful BBQ sauce, and your choice of veggies and cheese, these quesadillas are not only delicious but also customizable. Perfect for busy weeknights, they are easy to prepare and great for the whole family. Serve them with a side of fruit or a salad for a balanced meal that kids will love.

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup BBQ sauce (choose a kid-friendly, mild variety)

1 cup shredded cheese (cheddar or mozzarella)

4 large flour tortillas

1/2 cup corn (frozen or canned, drained)

1/2 cup diced bell peppers (any color for fun!)

1/2 cup chopped green onions

Cooking spray or a little olive oil

Optional: sour cream or ranch dressing for dipping

Prepare the Chicken Mixture: In a medium-sized bowl, combine the shredded chicken and BBQ sauce. Mix well until all the chicken is coated in sauce. Set aside.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. On one half of the tortilla, sprinkle a layer of shredded cheese, followed by a portion of the BBQ chicken mixture. Then add a few spoonfuls of corn, diced bell peppers, and chopped green onions. Top it off with another layer of cheese. Fold the other half of the tortilla over to create a half-moon shape.

      Cook the Quesadillas: Heat a non-stick skillet over medium heat. Spray with a little cooking spray or add a splash of olive oil. Place the folded quesadilla in the skillet and cook for about 3-4 minutes or until the bottom is golden brown and crispy. Carefully flip the quesadilla and cook the other side for an additional 3-4 minutes until golden and the cheese is melted. Repeat with remaining tortillas and filling.

        Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges. Serve warm with optional dipping sauces like sour cream or ranch dressing.
